To change the background color: Edit, Options, Viewer, than change the background color. In CFX-5.7 you may even chose 2 colors and images for the background

To remove the legend: In CFX-5.6: Object selector, then uncheck DEFAULT LEGEND (double-click it to edit). In CFX-5.7: Objects, View Control, then uncheck Default Legend (double-click it to edit).
