If you do a normal restart (start from res file or pick the res file to initialize from), the solver will begin the count at absolute iteration number 501, current iteration number 1 and your transient statistics will begin at the absolute iteration number 1000, current iteration number 500.

If you restart with a new def file and interpolate your results onto this def file, the absolute and current iteration numbers will start from 1.
