my problem is "water is flowing on the surface and over the water, gas or air flowing with impurities and impurities in the air carried over or it fall or mix with water and only pure air flowing or collected at the end"

how to define boundary, material property and interface should be defined?

I think you should check the CFX help on multi-phase flows. also there is good tutorials, I guess number 7 and 15, for this topic.
