Is it possible to simulate an evaporation cooling application in FloEFD. like spraying water in a hot gas stream for it to cool down?

There is the film condensation capability which comes this application the closest. You cannot model a spray with it but you can define a film that evaporates and takes into account the phase change energy. However this is a transient approach and the film will be gone after some time.
So depending on what exactly you are planning there're might be a way of doing it. |
