Control Level on a Separator Tank

Hi.

I posted this before but didn't receive any response maybe because my question wasn't totally clear. So please let me reformulate it, and sorry in advance for my english.

I'm trying to simulate a separator tank. A mixture of water and oil (water is dispersed as droplets) enters at the bottom of the tank trough a layer of water, so the water droplets stays in the water layer. Finally, the oil exits trough the outlet located at the top of the tank with a smaller water content. I attached a picture of it.

In order tu simulate this process, I neeed to be able to control the level of the water layer. I have found a work from other persons where they wrote a code to modifiy the source term in the mass balance equation to mantain the water level.

Do you guys have any idea of how to do this?
