I have a simulation that is 12000 iterations to converge, but I can not view the details of evolution iterations from the beginning of the simulation.

Is it possible to display all iterations from 0

By default, Fluent only stores the monitors from the last 1000 Iterations. AFAIK, it is not possible to recover the deleted values after the simulation is done.

Before you run the simulation, you can set the value for "iterations to store" of your monitors to a higher value.
Here you can also choose to write them to a file if you are really interested in all the details.
