How can i draw water surface profile for open channel flow by fluent ?

It appears that you have already simulated the case and want to post-process it. Just create an iso-surface of volume fraction of water with a value of 0.5. That will show the free-surface.

You can either export the surface data using File > Export in ASCII format or using XY Plot > Write to File. Both will write text files in different formats.
