How to define a three different layers of water with different salt concentration ?

Upper Zone 1 : Fresh Water with almost zero salt concentration ( 0.2 m)
Middle Zone 2 : Gradient (0.8 m )
Lower Zone 3 : High and uniform Salt Concentration (1 m )

Currently, It is all a pure water.
