kinetic theory in Fluent

Having large temperature gradients in my simulations, I try to have realistic gas properties. I usually use polynomial fits for Cp, conductivity and viscosity. I am wondering if the kinetic theory model provided in Fluent is good for such a task. What are its limitations or application domains ? If someone has some experience with it, thanks for answering me.. Oh and yes, how do I choose the degree of freedom ?? (i am using air). Have a nice day.
