H20 flow operating pressure

Hi, I've been modeling 2D incompressible air flow past bluff bodies in a shaft using a velocity inlet and an outflow bc's. I would like to do the same with water but I'm not sure how to set the operating pressure for this case. It can't be 101325 anymore. Thanks.

For incompressible fluid simulations, the operating pressure doesn't matter

Why then does my reference pressure location seem to matter? When I was running my cases in air, I initially left the ref. press. location at the default (0,0), which is inside of my plate, and got Cp values that were around 20 which is way too high. I then moved the ref. press. location to the velocity inlet, changing nothing else, and got a Cp of 1, the correct value for this stagnation region. I'm a little confused. Thanks for your reply.
