i mean a higher temperature of a jet injecting into an ambient with lower temperature

If I understand, you have a domain with a temperature, and And you have a jet coming out of an inlet with a different temperature...
if this is so, fix the temperature of the velocity inlet at the jet temperature..., fix the temeprature of the boundaries of your domain at the ambient temperature... |

But for velocity-inlet B.C., there's no temperature option, where can I set their temperature? |

I think you forgot to turn on the energy equation...
define-> model-> energy then go back to your velocity inlet BC...you should see the temperature |
