Default UDF for evaporation

Can someone help me in writing the UDF for evaporation model? How can i include it over the entire domain and tell that the mass transfer occurs only at the interface? Do i need to use the DEFINE_MASS_TRANSFER macros or DEFINE_PROFILE for loopin the cells in the entire domain?

It is urgent.... Thanks in advance.
