Default Ash/Carbon Content

Hello everyone I currently have a converged 3-d coal combustion fluent file. I want to track each coal particle to determine its carbon content throughout the model. I tried doing particle tracking to track particle mass and other parameters. However, how do I find the coal's carbon content? I would assume you take the particle's mass subtract the ash remaining in the particle. However, I can't find where I can extract particle's ash content also. If anyone has any information on this, it would be very helpful

Thank you in advance
