Default shear stress

I am doing hydraulic jump simulation over rough bed in open canal and I am using VOF & Turbulent model. I want compute Velocity distribution along canal and shear stress over bed. How can I do it? and how many is amount of courant number for segerated,implicit,Unsteady flow ?I know the default amount in model is 0.25. also I have some problem in Patch, I define X-velocity of flow (0.2 m/s) for initialize and volume fraction of water for patching should I define this velocity for patching too.

Shear stress is a standard output variable.

do you have any papers how to compute shear stress in turbulent multi-phase flow?
