Glycol displaces Water in a pipe, a few questions need to ask, thanks!

I have a problem with Fluent from my project. A 3" pipe is full of water and later MEG will be injected into the pipe. I need to simulate the mass fraction distribution of MEG in the pipe after certain period injection. Following questions I need to ask you:
1) How should I define the materials? The density, viscosity and diffusivity of MEG is correlated with temperature. UDF of mixtures properties have been written. I do not know how to define the material properties for the mixture.
2) Since it is multiphase flow (Liquid+Liquid), should I define water as preliminary phase and MEG as secondary phase?
3) Species transport model has been selected. How to check the mass fraction of MEG at the end? I didn't find the Mass fraction option from the drop down lists.

Thanks!
