CFD Meshing Theory. Where can I read something more???

Hello,
I'm moving my first steps in CFD and everything is wonderful and interesting. I've already done my very first simulations and everyday I leard dozen new things. BUT now I need some THEORY.
When I click the "meshing" button I'd like to know what the computer is actually doing. what are the logical steps in the mesh creatioon process? It first creates a surface mesh and then the volume mesh, right? Sometimes it uses triangles and sometimes quadrilateral elements. Why? When it creates the volume mesh, it can follow several approaches (Patch-conforming, Patch-independent etc). Which are the differences? Why different strategies? Why sometimes the meshing process simply doesn't work?
In few words... I'd like to know what I'm doing, when I click here or there, when I choose this or that option. It's the only way to use these powerful programs in the most intelligent way.
Is there a manual, a book (something like "meshing: theory and practice"), or whatever, where these things are explained in a logical order?
OK, CFX Help teaches a lot but that's not exactly what I need right now.
I need something that EXPLAINS it all from the beginning to the end. I'm using Ansys, but I think that these theorical things don't belong to this program or to another one.

I hope you have understood what I'm looking for. I know it's not easy to understand my english, and I'm very sorry about that, but I really hope you'll be able to help me.

Thanks SO much for your help. I have already downloaded the second book, the free one, when I studied the reference section in CFD Online. The first book must be great too... I'm going to tryi to find it. I Thank you so much again.
