SGS kinetic energy and modelling

Hello to everybody. Can someone suggest me a text where I can find the full derivation of the subgrid-scale kinetic energy (for LES purposes of course)? I wuould need a version in which the dilatational terms are NOT drop out. I know I can derive it myself, but the problem is that I found a convenient expression for combustion modelling in a paper, in which the sgs heat flux appears...I would like to understand how it appears into the equation.

Finally, if someone can suggest also some modelling for the various terms (or some papers where to look for them) it would be great!

Thank you!
