Are most aeroacoustics jobs defence related irrespective of the country.

No, not at all, aeroacoustics is becoming more and more important in more and more application areas. I'd guess that the area where aeroacousitcs is most used today is in the design of commercial aircrafts and aero-engines. New noise requirements on civil aircrafts is becoming stricter all the time. The automotive sector is also starting to use aeroacoustics.
