I was just wondering what does Dynamic mesh stand for?

What kind of application can it be found?

It is a mesh, in which the grid lines move.

The applications of dynamic mesh are in internal combustion engines, turbines etc.

Can i consider it for a simulation to study different aileron or flap deflection of a wing?

The term "dynamic" could refer to motion and/or resolution adaptation.

Moving and deforming meshes are used in applications that involve parts moving relative to each other (e.g. wing/aileron configurations). Two of the most applicable techniques are "grid deformation" (for relatively small motion and simple geometries, easy to implement) and dynamic "chimera" grids (for unlimited motion, complex geometries, multiple moving objects, difficult to implement).
