How do we find the courant number for a particular model?

if you analyze model in transient yes it will need to define it.otherwise if system you created is relevant to steady-state that is nonsense,

you might as well browse about courant number,

if you are working on steady-state , you can write courant number box down 200 or 500 or 1 that makes no difference,

what do you mean? the Courant number is defined in terms of discrete components of the computation, not in terms of a particular model

The Courant number is a function of a characteristic velocity, the grid size, and the time-step. Hopefully, you know these parameters from your model setup.

In one dimension, the equation is

\mathbf{Co} = \frac{u \Delta x}{\Delta t}.
