Default finite volume Discretisation

Can some one know a book or how to use differincig schemes in space (upwind, central,hybrid...) and differincig schemes in time (explicit, implicit...) to discretise a transient convection-diffusion equation where the density is not a constant and the viscosity too. I work with PHOENICS code and I write equations used in PHOENICS; If thre is some one who work in the subject he can contact me.
