There are lot of references, but if you want something very complete and free that you can get on the net, well check the website of Ugo Piomelli: http://www.glue.umd.edu/~ugo/research/publications.html

and especially the link to U. Piomelli. Large-eddy simulation: achievements and challenges. Progress in Aerospace Sciences 35, pp. 335-362 (1999). http://www.glue.umd.edu/~ugo/research/psfiles/pas.ps

Another good reference would be: "New trends in Large Eddy Simulation of Turbulence" M. Lesieur & O. Metais Annu. Rev. Fluid. Mech., 1996.
