The bibliography of LES is enormous. Since a textbook dedicated to LES already exists (inspite of its yet unproven capabilities) it might be better to look at the textbook first. Large Eddy Simulation of Complex Engineering and Geophysical Flows, by Boris Galperin, Steven A. Orszag(Editor) This book should be available in most libraries. Aside: I worked a little bit on LES for my Masters. My thesis is available on the web. I can suggest that you print the bibliography and proceed from there too.
