Multiple flow inputs (FLUENT and GAMBIT)???

Hi.
Basically Im pretty new to CFD.
Im trying to model an insulation pack using the programs gambit and fluent but im having trouble setting up my model.
The pack consists of around 27 layers of foil with gaps inbetween and a coolant flowing along each of these channels.

My questions regard how to set up the model:
1) Can I use just 1 inflow for all the channels since it is the same coolant or should I make a different mass flow inlet for each channel?
2) when applying the thickness of each wall should i just create a wall in gambit and then define a thickness for it in fluent?
3) What mesh size/scheme should I use? Each channel is about 2.2mm wide and the length of the pack is 457.2 mm.

Sorry that I sound like such a beginner :(
Any help would be greatly appreciated. Thankyou very much

Jon
