Default Convective terms

I am looking for net available papers about a mathematics behind numerical discretisation of convectove terms in Navier-Stokes incompressible solution for free surface flows on staggered grids.

As far as I know there are several methods widely used in that type of numerical calculations: second order central difference, upwind, hybrid method and UTOPIA, for example.

What I am really looking for is an introduction to or comparison of those methods. I am currently working on a new free surface solver based on MAC method (Harlow and Welch 1965) with SIMPLE projection (Patankar) and have some big troubles with flow without a viscosity.

Hope somebody there is able to help me,

Best Regards,
