Hello,

vtk is a C++ library for 3D data visualisation. It contains lot of functions for plotting vector fields, density fields tensor fields and others from data on regular and unregular grid. It's open source and freely available, but to learn it, it's best to buy the book on vtk advertised on their site. I tried it during my diploma work to study interstellar cloud gas simulation and it seems well designed. It has a processing pipeline where you read the data, process it with some filters and then display it.

I don't know if it is used in a lot of commercial application, but I know it is used in the academic world.

Mayavi is an opensource project based on VTK: it is a graphic user interface using VTK to analyse and display data. I didn't use it, have a look at their website [2]
