I tried searching but did not really know what to search. I would like to do visuals like these in the video below. How can it be done in Paraview or does anybody have a link to a tutorial for it?

Greetings Paul,

Both videos show results of transient simulations.
The first one requires that you run OpenFOAM's wallShearStress application before ParaView, then simply show the newly added field as surfaces.

The second one seems to be contours... but I don't know of which scalar field

As for tutorials, I don't know of any specific ones, just the ones that ParaView has on their wiki: http://www.paraview.org/Wiki/The_ParaView_Tutorial

The contours may be for vorticity magnitude. Just a guess based on where they are and what the flow field looks like.
