Question Information on "turbulenceProperties"

Hello,

I would like to have some informations to understand correctly the turbulenceProperties textfile in "polyMesh".
In this text file, it's possible to turn turbulence modelling on/off. I figured out, by making some simulations, that when it's turned off the simulations seems to be stationary, but I am not sure.
Can anybody explain to me how this turbulence (on/off) affect the simulation.

It could be useful to know what type of simulation you want to do (incompressible/compressible, RANS/LES) and which solver you are using ?

I just want to make an incompressible RANS simulation with simpleFOAM.
Actually, i'am working on a flow over a step to understand this "turbulence button".
I have tried to check the source code but I get lost...
