unsteady mixing of three liquids with OpenFOAM
 
I would like to solve this problem in a time dependent matter.
Which solver is the best? Does anyone have an example case?

I guess interMixingFoam and the dambreak tutorial in that folder are a good start?

on second thought, interfoam might not work as it can support only two miscible fluids ...

You can try multiphaseInterFoam.
Description:
Solver for n incompressible fluids which captures the interfaces and includes surface-tension and contact-angle effects for each phase.

Just a correction, interfoam doesnot support miscible liquids.
Description:
Solver for 2 incompressible, isothermal immiscible fluids using a VOF(volume of fluid) phase-fraction based interface capturing approach.

actually, you will have to extend interMixingFoam to three mixing phases.
