Regarding different matrix solvers applicability

I have noticed that some matrix solvers are not applicable for certain tasks. For example, using the discrete ordinate radiation model required me to use the GAMG solver. Same thing happened to me when I tried to solve an equation of the form laplace(sigma, phi)=0. Using the PCG solver resulted in highly unphysical results for some configurations of the sigma field and the phi BCs.

Now my knowledge of the mathematics of the matrix solvers is not very deep, but I was wondering if anyone can explain to me how to find the best solver for a task. Are there general pros/cons of a solver, do you just try until you find one that works stable for a task, or what is the best approach here?

Can anyone provide some insight?
