Looking for recommendions for two evolving cases

First of all, I am relatively new to OpenFOAM, but have a 15 year history with other commercial and/or university codes including the code Eric Patterson authored CFDSHIP-Iowa.

Over the last few weeks I have been able to take grids I created in Gridgen and transfer them to OpenFOAM and got resonable incompressible unsteady results.

The first model is a ships rudder on a ground board like you would have in a water tunnel. I have been manually moving the inlet/outlet patches to change the AoA. I would like some pointers on how to set this up with a movable mesh so I can prescribe a set of rudder angles to develop lift/drag curves as a function of rudder angle. Eventually, I will be including this in the flow field of the actual ships hull.

The second case I have is a ships topside again modeled on a ground board. I have used turbFoam to get an unsteady solution of the wake around the superstructure. Here I am looking for input on how to model the exhaust gases that are ejected from the stacks for a various stack gas velocites and temperatures. I need to track the stack gas plume, and if it impinges on the ships superstructure I need to determine the temperature of the plume at that point. I should add that all of this needs to be done in the context of various wind over deck speeds and directions.
