How can I find out what each solver is exactly doing? Discretization-schemes, etc ...

Check the subfolders, /constant and /system, of your case for what you're using and the user guide for available options.

I think OpenFOAM can solve these problems with the turbFoam solver. Have a look at the User Manual (p. 84).

BTW: Which one is the source code file for the solvers?
