Could anyone tell me what pCorr variable is in compressibleInterFoam?

Where is it defined?

The pcorr field is generally used for flux correction when the mesh changes (i.e. a dynamic simulation). See e.g. CorrectPhi.

Thanks for the clarification.
So, for static meshes, it will not be doing anything.
