Default clarification regarding dev(symm(grad(U))) in Smagorinsky model

Hi,
The subgrid stress tensor T_ij = (1/3)*d_ij*T_kk - 2*nu_sgs*Sbar_ij

I am pretty sure that T_ij is referred to as B in OF.

Now (1/3*d_ij*T_kk) = (2/3)*k*I

And Sbar_ji is 0.5*(dU_i/dx_j + dU_j/dx_i)

That can be found by symm(grad(U)).

could anybody explain to me why do we use dev(symm(grad(U)) ?
