I'd like to simulate a typical fluid dynamic case, i.e. an axisymmetric jet-flow in an open space.

have a look at makeAxialMesh for conversion into wedgy-type mesh
there is also an example of a blockMesh grid.

I took a look at the tutorial you suggested me for the solver (interFoam): i think it is too advanced for my present knowledge,so can you help me?
Furthermore the case I'd like to simulate is easier I guess: in fact I want only to reproduce an air jet entering a not-bounded atmosphere where air is in rest.

maybe turbFoam (transient) or simpleFoam (steady state) would be appropriate for you. But I wanted to tell you that the mesh is axisymmetric as you wanted.
I'm doing a numerical calculation of an injector by simplefoam solver, geometry is now axisymmetric (upperwall represents an area of torpido, interWall that of the outer surface of the jet type slip to see the behavior of velocity Uy, but I have two bad results:
1 - the Massflow is not constant when I apply CalcMasseFlow between inlet and outlet
2 - I have a pressure not stable
I spend a lot of time to make changes in my geometry and methods of calculation but I have not been successful;
