Run:
R <root> <case> //calcs stresses
and then
Rcomponents <root> <case> //makes stress components
and then
foamToVTK <root> <case>

I have no idea what displacement is in this context

foamToVTK only converts scalar

foamToVTK only converts scalar and vector fields. If you want your stresses to be converted you will first have to decompose then into vectors or scalar components.
