ah, ok I didn't understand what you meant with zones.
In your case you need to define the interfaces as INTERFACE in the BC panel (gambit)
Then in fluent, set the interfaces (define/interfaces...)...

split your domain into your differents volumes,...

split your domain into your differents volumes, and set each volume with your specific condition in the "Specify Continuum Types" panel.
Then in fluent, will be able to set each domain separately
