Regarding the shear stresses, you can try fixedDisplacementZeroShear BC.
Also I think you have to use a contact model in order to avoid penetration of pot and ground.

Sorry, I can't cause I haven't used that type of solvers yet.
Maybe you have to run the probe utility with explicit specification of the region (probeLocations -region ...) or run it in both regions...

Yes thats possible. Actually you can probe all the variables which are written to the time folders. Just add them to the list in probesDict. Of course you have to make sure that the probe actually is...
