Default Field Function for interpolating a table to regulate a mass-flow

I'm new to using field functions and am looking for a function which can regulate a mass flow or interpolate a table.

I need different values on the mass flow relating to fractions of time. For example 10kg/s from t=0s to t=300s followed by followed by 0kg/s from t=300s to t=600s followed by 10kg/s from t=600s to t=900s


As much more values are intended for the future, I would like to use a table and interpolate it. I could generate a table with time at the first column and mass flow at the second column. What's the field function for interpolating the table? I tried to figure it out, but am not sure if it is correct:

interpolateTable(@Table("mass_flow"), "Time",LINEAR,"Mass_Flow",$Time)


Can you help me with that function?
