Hey guys,

Just wondering, is there a way to assign different node counts to parallel edges for hexa mesh?

Yes, it is possible. You need to click on edit block and then convert block type. Convert the block to free block and then you can assign whatever you want. If you need a mapped block instead of a free one, just choose convert free block free face to mapped at the same place (convert block type).
