Hydrofoil Structured Mesh

Hello,

I'm attempting to recreate a mesh for a hydrofoil as I need to change the geometry however I don't have the original workbench file, only the .def file.

I've attempted to toy with the meshing parameters assosciated with edge size and havn't managed to produce a structured mesh as shown in the .def file. I've also attempted to use the hex-dominant meshing method however that also reduced the quality of elements around my hydrofoil as they changed from tet to hex. What would be a good method to create a structured mesh as shown in the above photo for the one surface?

Thank you
