can Simulation CFD solve velocity and temperature at the same time?
I have done some tutorials where at the begining of the solving process only velocities are solved and at the end only temperature?
Yes it can. This would be mandatory for running buoyancy (natural convection) where the temperature variation is what induces the flow. For forced convection problems, with the assumption that temperatures or fluid density variations have no or minimal impact on the flow, you have the option of first solving the flow field, then "freezing" it while the temperature field is calculated.
