Looking for help with a CFD project, mimicking a wind tunnel experiment

Background: I am partaking in a college level project, on CFD simulation of a wind tunnel experiment, and the college has afforded me very little time to use and get used to the CFD software package. The package I am using is STAR CCM+. I know the very basics, and have only completed one tutorial on it.

The project is to simulate an experiment on 2D flow over an airfoil and a bluff body in a wind tunnel.

I would like help in setting up the simulation, running it, and obtaining relevant results on it. The catch is, I would also like to be walked through why any of the processes completed were done in that fashion, as it needs to go into a report (e.g, why was one fluid flow model selected over another, why one property selected over another, etc). Basically the body inside the wind tunnel has to equal the span of the wind tunnel. How do I set this up? From there I should be good.
