how can i enter principal characteristics of my soil domaine in ansys cfx?

What do you want to do with it? The material model you require depends on what physics you are trying to model.

I want to model the flow of a fluid (water) through a poreu environment (soil), characteristics and soil composition are reported in the table.

CFX models porous material with loss coefficients. You are going to have to work out what the loss coefficient for this material is yourself - a search of the literature in this field is the place to start. Also Google might dig something up (especially google scholar).
