general heating/cooling process question

I have general question
Why when I modell heating or cooling process - determined time of these processes are much longer than in realistic processes ??

It all depends on the modeling assumptions. The better the model, the closer to the real situation.

The experimental data (real situation) contains errors, and the model as well. A good model is calibrated against the best available experimental data (minimal experimental error).
