Default Variable composition mixture .vs. reacting mixture

Can anyone please explain the difference between 'Variable composition mixture' and 'reacting mixture'?

I am modelling coal combustion (three reactions considered, devolatilization, char combustion, and volatiles combustion) with reacting mixture, it works. But still, I'd like to know if 'Variable composition mixture' works in this case and how?
