I have been assigned to analyse cement with a particle density of 2500 kg/m^3 and an average particle size of 25 micron.

In CFX Pre I am prompted to enter a "molar mass" but not an "average particle size." Are "molar mass" and "average particle size" related? If so, what units will I use for molar mass?

How are you modelling this, as lagragian particles or a eularian continuum?

Have you done the CFX tutorials? Number 17, Multiphase flow in a mixing vessel would be a good starting point.
