Default Variable of concentration for multiphase simulation

Hi all,

I try to visualize the concentration of fluids in CFD-post after a multiphase simulation.

To do that, I need to define a new variable !!!

Please, can you indicate me the different steps to define the variable of concentration from the add of a new variable (see picture) ?
