How to Control the Fluid Level on a Tank

Hello.

I'm simulating a tank in which water and oil enters trough an inlet located at the bottom, and there are two outlets; one placed at the top of the tank for oil, and one at the bottom for water. The question is: How do I fix a determined water level on Fluent?

An strategy that I found is that there is no water outlet, and they modify the source mass term for water, depending on the current volume of water in the tank and the targeted volume, to keep the determined level.

Can someone please elaborate more on the above strategy? or are there other ways to solve this issue?

Thank you.
