Default How to study mass transfer in Fluent ?

Hello everybody,
I work in the field of numerical simulation of Taylor bubble in round pipe for the flow of air bubble trought liquid water.

I have a problem,i don't know how to investigate the mass transfer during the simulation.I try to find some informations on fluent help or in litterature but i can't find specific informations for this problem.

Should i use an UDF function ? If yes,where can i find this UDF ?
Can i access the mass transfer just by post-treatment at the end of the simulation ?

Anybody have a idea on this subject ? It's wired there is no answer
